29: STORY TIME: How I Manifested My Way Into a Pageant
"She believed she could, so she did."
Happy Memorial Day! I'm taking a break from my regularly scheduled programming for a story telling session about the time I manifested myself into a pageant. Not a beauty pageant, but regal and fabulous all the same.
Manifesting our dreams is important. Is simple. And is powerful. And is the moral of this fun tale that had me on cloud nine and my "boys" very uncomfortable.
As promised in the episode, here is the recipe for my mom's Secret Carrot Cake. It was secret because it was the most requested item from her catering business and she wasn't about to let the recipe out for fear that it would damper her business! So it was never published in our cookbooks and currently can't be found any where else! Enjoy!
Secret Carrot Cake
2 cups flour
2 cups sugar
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 1/2 cups oil
4 eggs, slightly beaten
1 teaspoon vanilla
3 cups grated carrots
1/2 cup walnuts (optional--I've never opted for these)
Sift together the dry ingredients in a large mixing bowl. In a separate bowl, combine the eggs, oil, and vanilla. Add the wet ingredients to the dry. Mix until well combined. Add the carrots and nuts and combine.
Bake at 350 degrees for 55-60 minutes in a greased and floured bundt pan. Once baked, let the cake cool in the pan for 10 minutes and then turn out onto a cooling rack and cool completely.
Cream Cheese Frosting
8 ounces cream cheese, room temperature
1/2 cup butter, room temperature
3 cups powdered sugar
1 teaspoon vanilla
Cream together the frosting ingredients with a mixer until smooth. Once the cake is completely cool, frost the cake. I typically pour it over the top and let it drip down the sides as opposed to frosting every inch, etc.
